There are a lot of reasons we started The Gelato Lab. Near the top of the list: our own kids.

They go to school right here in Round Rock, which means every day they're looked after by teachers and staff who show up early, stay late, and pour everything they've got into other people's children like they're their own. We see it up close. And we've wanted to do something about it for a while.

So when the Walsh Middle School PTA teamed up with our little shop to throw a Gelato Bar for the Walsh staff, we didn't think twice — our treat, start to finish. We closed up, loaded the cart, and rolled it right into the school.

And y'all — that room. Teachers lighting up over their first bite. People sneaking back for seconds (we saw you, and we're proud of you). A whole lot of "wait, this is homemade?" One staff member told us, this was totally unexpected.

We scooped over 200 cups that morning, all of it made from scratch the day before — no premixes, no shortcuts, the same way we make everything.

Here's the thing about gelato: for us it's never really been about dessert. It's what you hand someone when you want them to feel celebrated. And nobody deserves to feel celebrated more than the people taking care of our kids all day long.

To the Walsh Wildcats staff — thank you. For our kids, and for everybody's kids. You made our whole week.
