Not because we didn't work hard for it. We did. But because when you're heads-down every day making gelato from scratch, answering DMs, restocking cups, and figuring out payroll — you don't always stop to see how far you've come.

How This All Started

My wife Andrea and I didn't open The Gelato Lab because it was a safe business decision. We opened it because we genuinely believe that dessert — real dessert, made with real ingredients — has the power to bring people together.

We relocated to Round Rock from Australia, and from the very beginning, we fell in love with this community. The families, the energy, the way people actually show up for local businesses. We wanted to be a part of that. We wanted to be the place where you bring your kids after a game at Old Settlers Park, where you celebrate a birthday without it feeling like a chain restaurant, where you can grab a scoop and just... breathe.

So we built The Gelato Lab around that idea. Not around trends, not around what's easy — around what's real.

What "Real Gelato" Actually Means

We say it on our website: Not ice cream. Real gelato. And we mean it.

Gelato isn't just a fancier word for ice cream. It's a completely different product — slower churned, denser, served warmer, and made with less air and less fat. That's why the flavor hits differently. That's why you can taste our Rainforest Chocolate and immediately know it came from an actual cacao source in Ecuador, not a flavoring bottle.

Here's what we don't do:

  • We don't use premade bases or premixes
  • We don't use artificial flavors
  • We don't cut corners on ingredients

Here's what we do every single day:

  • Make every batch from scratch in our Round Rock kitchen
  • Source our chocolate directly from Ecuador's Amazon rainforest
  • Use real South American fruit in our dairy-free Maracumango sorbetto
  • Rotate 24+ flavors with seasonal specials you won't find anywhere else

We're not a franchise. There's no corporate playbook we're following. Every decision — every flavor, every ingredient, every scoop — goes through us.

What This Feature Means to Us
